Banana Nut Cake



I am self proclaimed queen of quick fixes. Any recipes that say easy and semi-homemade, I pounce right upon it. My mantra in life is "All time consuming recipes can be recreated to be made in less than 30 minutes."
Whether it is complicated Rogan Josh or Biryani, I have discovered the secrets of making it in a jiffy.
This is recipe from my cousin SC who hates taking shortcuts while cooking. She likes to do things the right way. When she forwarded me this recipe (She got it from her neighbor DW) I knew that this had to be good. This recipe had convinced a staunch believer like SC that yummy treats can be made in jiffy when we make some wise substitutions.

To all the quick fix cooks and the die hard fans of old fashioned
cooking, here is the recipe for Banana Nut Cake.
Start with a Yellow Cake Mix

Add to cake mix:
2 Eggs
1/4 cup- Brown Sugar
2/3 Cup-Water

1 teaspoon-Baking Soda
1 1/2 teaspoon-Vanilla
1/2 cup-chopped Walnuts
1 Cup-Mashed Bananas
Beat together for 3 minutes. Grease and flour pan. 9x13 Bake for 35-40 minutes at 350 degrees. (325 in glass pan) Top with Sour Cream Icing or Cream Cheese Icing.
It is better the second day.

Hey Just saw your comment enquiring about the places where kappa biriyani is available in Cochin. Since this is basically a thattukada special, i cannot give you any specific names of the restaurant but you check out the thattukadas at the Vyttila Jn and Edappally , & Palarivattom Jn where you will find lots of these road side eateries.....you may also try some very small restaurants too. Hope you get to find 'em :)Enjoy your visit to Cochin:)
